Fluffy puffy American classic muffins, just 5 steps, nutritious and delicious anytime easily on the table.
Ingredients
200g gluten flour, 1 tsp baking powder, 1 tsp salt, 1 egg, 300ml milk, 25g melted butter, 150g blueberries, 150g olive oil, honey/maple syrup, to taste

Combine the gluten flour, baking powder and salt in a large bowl. Beat the egg in another bowl and add the milk and mix well

Pour the egg-milk mixture into the flour mixture and mix well, add the melted butter and half the amount of blueberries and mix well

Heat about 1 tbsp olive oil in a pan, use a tablespoon to scoop a tablespoon of the batter and pour it into the pan, you can fry 4~5 muffins at a time at the same time (depending on the size of the pan)
Seat the muffins in a bowl, and then fry them in the oven.

Cook on medium heat for about 3 minutes or until bubbles form on top of the muffins, then flip and cook for another 2 to 3 minutes or until golden brown

Repeat steps 3 and 4 until you've used up all of the batter, then stack the pancakes on top of the rest of the blueberries and drizzle with honey or maple syrup to taste.
