How to make piyazi naan ?
Add a pinch of salt to the chopped onion, remove the water and wring it out with your hands or a piece of gauze. Don't waste the onion water, but brush the surface of the naan in step 8. I used a blender, the amount is not easy to operate, stirred a red onion, after the water onion used about 30 grams.
Add the yeast, eggs, sugar, salt, and water to the flour, and initially stir to form a floury texture
Knead the flour into a rough ball, and let it rest for ten minutes.
Knead into a smooth dough, add butter, at first a little sticky hands, do not add hand powder, knead a little more will be smooth.
The oil will be kneaded into the dough, and the dough will become softer.
Ferment until double in size
After exhausting, knead the chopped onion into the dough. If the onion is not dry enough, the dough will stick to your hands when kneading, so you can add a little bit of hand powder appropriately.
Divide the dough into two. Let the dough rest for 5-10 minutes. Preheat the oven to 210 degrees Fahrenheit and place a baking sheet in the oven at the same time. After five minutes, take the baking sheet out, brush it with oil, put the dough on it, and roll it out into a circle, thicker on the sides and thinner in the center. Spray with water or brush with onion water, which is what I did. (Preheat the baking sheet to make the bottom of the pancake crispy. If you have a stone oven, you can skip this step.)
Sprinkle with white sesame seeds.
