2. Interpretation

Amaranth leaves have green edges and purplish red near veins, which have poor heat resistance and soft texture. There are amaranth with sharp leaves in Shanghai and amaranth with sharp leaves in Guangzhou. Amaranth likes to be warm and heat-resistant, and its optimum growth temperature is 23 ~ 27℃, and it grows slowly below 20℃, so it is difficult for seeds to germinate below 10℃. The soil is required to be moist, not waterlogged, and the air humidity is not strict. It is a short-lived vegetable, which is easy to bolting and blossom under the condition of high temperature and short sunshine. Cultivated in the spring with suitable temperature and long sunshine, bolting is late, quality is tender and yield is high.

3. Practice

Wash amaranth, select leaves, and drain for later use.

Slice ham and chop garlic.

Add a proper amount of oil to the hot pot, and add garlic to stir-fry until fragrant.

Pour in amaranth and stir-fry until the juice comes out. Add ham strips and stir-fry continuously. Sprinkle salt and take out the pan.
