How to make crabapple cakes
Ingredients
Batter (can make 4 crabapple cakes in one pot):
Egg: 1 (medium size about 60g)
Four: 120g
Warm water: 150g
Baking soda: 2g
White sugar : 2-10g (for feeding yeast, the amount is more arbitrary)
Yeast: 2g (baking powder can also be used)
Old noodles: 50g (optional, but the taste is better if used) Authentic)
Stuffing:
1. Bean paste filling:
Commercially available bean paste: appropriate amount (I bought Zhanyi)
Commercially available honey beans: appropriate amount (optional, used to increase taste)
Salt: a little (adjust bean paste filling)
Sugar lard: appropriate amount (optional, freshly diced) Sprinkle the pork suet with white sugar and mix well (if you don’t like it, don’t add it)
2. Meat filling:
Pork mince that is suitable for fatness and leanness: appropriate amount
Onion, ginger , rice wine, etc.: appropriate amount (for removing fishy smell, add according to preference)
Dark soy sauce: appropriate amount (for coloring, you can also use light soy sauce but the salt needs to be adjusted)
Salt: appropriate amount (It tastes a little saltier than the usual wonton fillings)
MSG: a little (for freshness)
Sugar: a little (a must for meat fillings in Wuxi snacks! It is also used to improve freshness) (function)
Sprinkling ingredients:
Traditional candied fruits such as green and red silk, candied dates: appropriate amount
Sesame seeds, melon seeds, pine nuts, chopped walnuts and other nuts: Moderate amount
Method
Prepare the old noodles at least the next night. This step can be omitted, but the taste may be slightly different. I used the old noodle recipe that I found in the kitchen, which saves time and effort. Before making, take it out of the refrigerator and cut off 50g
In addition, if you use a newly purchased cast iron egg burger mold, remember to wash the pot and oil it in advance so that it will not stick when you use it
Prepare the batter: Dissolve the yeast powder in warm water, add eggs, baking soda, and white sugar and mix well. Add flour and mix well. Finally, add the old noodles and mix well. Leave in a warm place for a while. (If you don’t use old noodles, you can just adjust the amount of flour and water according to the thickness of the batter in the video in the tips.)
Prepare fillings:
Bean Paste Filling: Put all the bean paste filling ingredients together and mix well. The proportion of bean paste and honey bean is according to your own preference. If you think it is too thick, add a little salad oil, spray a little water and microwave it for 20 seconds. Once it is hot, it will be easy to mix. Traditional bean paste filling (it is said) requires a little salt, so that the taste is not so sweet. I tried it and found it ok~
Sugar lard: The traditional version puts a little salt, but I don’t like it myself, so I No meat filling
It is actually the basic meat filling for homemade wonton dumplings. Add a little more salt, use soy sauce to color it, and then add sugar! ! Mix well!
Prepare the sprinkles: Chop the green and red shreds and candied fruits such as dates in the sprinkles, and mix them with dried fruits.
Let’s get started!
Heat the pan over medium-low heat and brush in a certain amount of oil to prevent sticking. Scoop an appropriate amount of batter to cover the bottom, put a large piece of bean paste/meat filling, and then pour some more batter to cover the filling. The amount I gave can make 4 full molds of crabapple cakes. If you don’t want to eat such a big cake, just pour a little less batter
Just sprinkle the pre-mixed sprinkles and sugar lard on top.
Heat for about 2 minutes, insert a fork from the edge and turn it around to help separate the cake body from the pot, then use the fork to take out the cake body directly and place it on a plate for later use.
If it can be separated smoothly, it means it is ready. If the anti-sticking of the pot is not done well or the time is too short, there will be more resistance
Sprinkle an appropriate amount of sugar on the bottom of the pot and heat it over medium-low heat. Caramel
Turn the removed cakes over one by one and return them to the pot. Be careful when scalding and wear gloves. Wait for 1-2 minutes and pay attention to the steam coming out of the pot and the smell. Don't make the caramel noodles too burnt, but don't let the filling and batter parts be undercooked.

Turn off the heat and take it out and it’s ready to eat
