There are two common ways to cook beef. The ingredients for making this dish are basically beef tenderloin, cabbage, garlic, dried chili peppers, light soy sauce, soy sauce and other condiments, as well as water starch.
The steps for the first method are as follows. First, cut the beef into thin slices, then add salt, light soy sauce, soy sauce, cooking wine and other seasonings to the water starch and egg white. If possible, you can also add salad oil. Mix well and leave it for about a quarter of an hour. Then, add oil to the pot. After heating, add garlic and stir-fry until the aroma of garlic comes out. Then, pour the prepared Chinese cabbage into the pot and stir-fry, add a little salt at the same time, stir-fry until the cabbage becomes soft, and then remove it for later use. Add cooking oil again. After the oil is hot, add ginger, garlic, etc., add bean paste, and stir-fry over low heat to produce red oil. Add an appropriate amount of hot water, turn to high heat and bring to a boil, then add the prepared beef tenderloin slices, add salt, soy sauce and other condiments. After the beef is processed, take it out and put it on the cabbage, pour the prepared soup, finally sprinkle the chopped green onion on the beef, and quickly pour the hot oil on it.
The steps for the second method are as follows. Cut the peppers into shreds, soak them in water and air-dry them. Slice the ginger you want to use, prepare the green onions, and cut them into sections. Cut the beef tenderloin into thin slices, add salt, oyster sauce and other seasonings to the beef and marinate for a while. Then add starch into it, stir well and let it sit. Add an appropriate amount of oil to the pot until the oil is hot, add onion, ginger and star anise and stir-fry until fragrant. Then add hot water. If you like to eat vermicelli, you can also add some vermicelli and take it out when cooked. Finally, when the soup in the pot boils, add the beef. When the beef is cooked, take it out, place it on the bean sprouts, and pour the prepared seasoning on top.
