Northeast cold noodles. Northeast cold noodles are made of buckwheat noodles with beef soup or chicken soup, spicy cabbage, sliced meat, eggs, shredded cucumber and pear strips. When eating, first put a small amount of cold soup and a proper amount of noodles in the bowl, then add seasoning, and finally pour the soup. The noodles are very thin and tough, and the soup is very cold, sour and spicy. Compared with the noodles made of ordinary wheat flour, the noodles with cold noodles in Northeast China are particularly slippery and chewy.
