What kind of wine does Huadiao wine refer to?
Huadiao wine, a kind of yellow rice wine, is rice wine made from glutinous rice, mainly produced in Shaoxing, Zhejiang, China.

Huadiao wine can be drunk directly or when it is scalded to 38℃-40℃. The alcohol content of the heated Huadiao wine is reduced due to volatilization, so it becomes more mellow, thick and easy to eat. Besides serving as a side dish, many famous dishes are made of carved wine, such as carved chicken and stewed crab meat.

On the origin of carved wine

Huadiao wine evolved from ancient female wine. Since the Jin Dynasty, female wine has been circulated in Yuezhou as a folk wedding custom gift. The book "Southern Vegetation" written by Shangyu (now Zhejiang) in Jin Dynasty records: "Southerners have several years old women, that is, they make big wine ... women will marry, but they will send vicious wine to their guests, called female wine, which is absolutely beautiful."

As for the quality of Huadiao wine, the original Huadiao wine jar was filled with ordinary Shaoxing yellow wine, which became old wine after being stored in wine cellar or wine warehouse for many years. When the altar was opened, it smelled wonderful and became a treasure in Shaoxing wine. Carved wine has naturally become synonymous with old wine and an elegant title of Shaoxing rice wine.
