Ingredients:
2 pieces of salmon
3 capfuls of rice wine
1.5 tbsp of miso
1 tbsp of mirin
3-4 cloves of garlic
pinch of shioja
Directions:
1. Prepare the marinade (miso, mirin, garlic) by adding a capful of miso, mirin, and garlic to it. Add a capful of rice wine, or omit it
2. Spread a pinch of salt on both sides of the salmon, then pour two capfuls of rice wine over the fish and marinate for 10 minutes
3. Take the fish to a kitchen towel to soak up any excess water
4. Spread the marinade evenly over both sides of the salmon, put it in a plastic box, and marinate in the refrigerator for at least an hour
5. Place baking paper on top and preheat the oven to 200 degrees C
6. Once the oven has finished preheating at 200 degrees C, place the baking tray in the oven and bake at 200 degrees C for 20-25 minutes
7. During the last 5 minutes, remember to check the surface of the fish to see if the fish is burnt? Pay attention to the heat!

Tips:
1. The salt in the beginning of the marinade is to let the water inside the fish meat release to reduce the fishy flavor.
2. White miso, red miso can be, white miso is sweeter, red miso more salty, so the sauce is ready to try their own taste, each brand of miso taste is different.
