How to cold-mix Zi Shan bracken?
Soak and wash bracken with clear water for three times, squeeze out the water and put it into a porcelain bowl.
Hot oil: put pepper, capsicum frutescens, black sesame and ginger into the pot to saute until fragrant, turn off the fire, take out the chopsticks except a few black sesame, and pour hot oil on the bracken.
Prepare a small bowl, add half a spoonful of salt and white sugar, pour in a spoonful of vinegar, stir and pour in bracken.
Pour half a spoonful of sesame oil, transfer the bracken in the porcelain bowl into a sealed fresh-keeping box, then shake it back and forth, left and right, up and down hard to make it taste evenly, and finally pour it back into the porcelain bowl.
