Jianshui [ji m n shu ǐ], also known as alkaline water, is one of the most important raw materials for producing Cantonese-style moon cakes.
It is made by dissolving edible alkali powder and baking soda in boiling water and filtering. Its main components are potassium carbonate, sodium carbonate and sodium bicarbonate. The high-quality scooped water is alkaline and contains about 10% phosphoric acid or polyphosphate, so as to improve water retention and acid-base buffering, ensure the stability of scooped water, and make it difficult to fail and deteriorate after long-term storage.
What is the function of scooping water?
1. Neutralize the acid in the invert syrup to prevent the sour taste of moon cakes from affecting the taste and mouthfeel; Second, control the speed of oil return and adjust the hardness and softness of the cake crust; Thirdly, that alkalinity of the moon cake crust is increase, which is beneficial to the coloring of the moon cake, and the high the alkalinity, the easier the moon cake crust is to be colored; Fourthly, the neutralization reaction between the scooped water and the acid produces certain carbon dioxide gas, which promotes the moderate expansion of the moon cake and makes the crust of the moon cake more loose and not deformed. Do you have to put water in the moon cake?

Is scooped water alkaline water?
In fact, scooped water is not completely equal to alkaline water, which is a mixture of caustic soda and soda water, while alkaline water is a sodium carbonate solution. The concentration of the scooping water is 60 degrees (because the formula of each prepared scooping water is not the same, the ingredients contained are not the same, so manufacturers should do experiments to see if the amount can meet their own needs).
