What are the practices of bracken?
1, practice 1

Ingredients: a handful of bracken, sesame oil, garlic, vinegar and salt.

Remove the hard part of bracken, wash and blanch in boiling water, drain and cut into sections. Add Chili oil, salt, minced garlic, soy sauce, vinegar and sesame oil, and finally mix well to serve.

2. Exercise 2

Ingredients: Pteridium aquilinum 300g, pork 100g, pepper powder half a spoon, soy sauce 1 spoon, salt half a spoon, chicken essence half a spoon, minced onion and ginger, and vegetable oil.

Pteridium aquilinum is stripped of fern hair and old roots, washed repeatedly and cut into small pieces. You can also blanch it before cutting it. Boil the water, add the bracken and blanch it for a while, take it out, cool it with cold water and soak it for another two hours. Shred onion, ginger and meat. Heat oil in a pan, add onion and ginger until fragrant, add shredded pork and stir-fry until it changes color, then add cooking wine, soy sauce and pepper powder and continue to stir-fry. If you like spicy food, you can put two millet slices.

Stir-fry bracken, add salt, add less water, stew the soup for a while, dry it, add chicken essence, turn off the heat and serve.

3. Exercise 3

Ingredients: a handful of bracken, a handful of bacon, a piece of salt, 1 tablespoon of Chili oil, a little chicken essence.

First cut off the leaves rolled up on the head, then cut off the old roots at the tail, rub them in clean water to wash off the fluff on the surface, boil the water, put the washed bracken in the water for a long time, and take it out when the water boils. Cool in clear water, wash several times, and then soak for a day or two. Remember to change the bitter taste of bracken. Drain the soaked bracken and cut it into sections. Slice the bacon, add appropriate amount of water to the pot, put it in the bacon slices and cook for about three minutes. If the bacon is salty, you can add more water to it, and then pour out the excess water when it is cooked. If it is not salty, cook the bacon until the water is almost dry, and add some cooking oil to fry it. If the bacon is fat, you can fry it directly without adding oil, then put the bracken in the pot and stir it evenly, and then stew a little water for a while. If it's not salty, just fry it. Add a spoonful of chilli oil or dried chilli powder and stir well. When the water is almost dry, add a little chicken essence and stir well.
