Homemade Dongpo meat
Ingredients: 500g pork belly, half a bottle of Shaoxing wine (about 300ml), appropriate yuba, appropriate rock sugar, appropriate ginger, appropriate onion, appropriate old soy sauce and appropriate soybean sauce.
Prepare three portions of fat, seven portions of lean pork belly, 400g, and wash. Cut the pork belly into 5 square centimeters, add a little cooking wine to the pan to remove the fishy smell, and then cool.
Place the calf support in a casserole and spread a layer of ginger on the support. Pork belly, peeled, put into a pot, add crystal sugar, soy sauce, soy sauce and a little salt, and pour about 150 ml of rice wine, preferably without meat.
Bring the fire to a boil, then turn it to a low heat (minimum heat), cover the pot and cook for an hour. Then put the skin epithelium into150ml rice wine and stew for another hour.
For people who like to eat yuba or fried tofu, put the soaked yuba or fried tofu together and cook for another 30 minutes. Done.
Shredded beef and eggplant
Ingredients: 2 long eggplants, 1 00g beef, 1 green pepper, 1 red pepper, a little onion, 2 coriander, 2 ginger, 2 cloves garlic, 3 teaspoons oil,1teaspoon salt, a little soy sauce, half a teaspoon pepper and a little pepper oil.
Wash and chop eggplant, green pepper and red pepper, and shred ginger and garlic for later use.
Add salt, starch and a little soy sauce to the ground beef and mix well. Pour 2 teaspoons of oil into the pot, add minced meat and mud, and serve.
Pour 1 teaspoon oil into the pot, stir-fry ginger and shredded garlic until fragrant, then add shredded eggplant and stir-fry.
When the shredded eggplant becomes soft, add soy sauce, salt and pepper and stir fry. Pour in the fried meat, green pepper and red pepper, then stir well. Pour in Chili oil and season.
Homemade fried noodles
Ingredients: right amount of rice flour, right amount of cabbage, right amount of sausage, right amount of eggs, right amount of oil, right amount of salt, right amount of garlic, right amount of soybean seasoning, right amount of Chili oil, right amount of pepper oil, right amount of sesame oil.
Drain the rice noodles, chop the cabbage, cut the sausage, and then break the eggs. Pour more oil into the pot, break up the eggs, and shovel the pieces for later use.
Stir-fry minced garlic and sausage with the remaining oil. When the sausage roll is slightly rolled up, add chopped Chinese cabbage and stir well, then add rice flour and eggs.
Add some water, cover the pot and cook for a while. Add soy sauce, Chili oil, pepper oil and sesame oil, then mix well from the pot.
