Practice steps:
Step 1, fresh crayfish cleaned and washed until the water is not cloudy, with cooking wine, soak for a while.
Step 2, prepare the garlic. I used a full bowl of this, soak in water, garlic, if you do not use water to soak, it is easy to paste, easy to have a bitter taste.
Step 3, blanch the crayfish in water.
Step 4, crayfish, drain water and standby.
Step 5: Cut the scallions into pieces.
Step 6, celery and green pepper cut into diagonal cut.
Step 7: Heat oil in a hot pan. Add star anise. Pepper. Fragrant leaves as well as perilla sautéed. Add the scallions and stir-fry.
Step 8, soak the garlic with more than half. Stir fry slowly over low heat.
Step 9, put crawfish material. Stir fry the flavor, then add the crawfish and stir fry evenly.
Step 10: Add a can of beer, the rest of the garlic, green peppers and celery and stir-fry well. Bring to a boil and simmer over medium-high heat for 20 minutes.
Step 11: Reduce the sauce over high heat. Drizzle some soy sauce along the sides of the pan
Step 12: Cover the pan with a lid and simmer for ten minutes for more flavor.
