How to make preserved egg sausage

1. Wash the pig casings and soak them in warm water for 20 minutes. Pour in water to see if there are any leaks.

2. Cut off the bottom of the mineral water bottle or beverage bottle, as shown in the picture.

3. Cut the green onion into small pieces, peppercorns, chopped ginger, and star anise into a bowl, pour in 130 ml of boiling water and soak, so that the aroma of the seasoning can be fully soaked out.

4. Soak for about 15 minutes and filter. After the seasoning water cools, pour it into the eggs. Don’t throw away the green onions, star anise, chopped ginger, and peppercorns; they will be used when cooking the intestines later.

5. Cut the preserved eggs into cubes, add salt and starch together with the seasoning water and stir evenly. Note: The yolks of purchased preserved eggs are usually a little sticky. You can boil them again to make them drier and the resulting egg sausages will have a better color.

6. Put a section of casing on the mouth of the mineral water bottle and tie it firmly with cotton thread. Remove the air from the intestines and tie the other end with cotton thread. Use a spoon to pour the prepared egg liquid into the casing. Do not fill it too full and leave a little space to prevent damage during cooking. This is to tie one end of the bottle mouth with a thread. As shown in the picture

7. Put water in the pot, pour the used seasoning into the pot, use low heat, do not wait for the water to boil, about 70 degrees, put the stuffed intestines into the pot , always use low heat to prevent the water in the pot from boiling. If the temperature is too high, add cold water to control the temperature. You can turn it over properly. At this time, use a toothpick to prick the intestines a few times to release the air in the intestines and prevent it from bursting. After about 25 minutes, prick it again with a toothpick. If the egg liquid does not leak out, it proves that it is cooked.

8. Even if the egg liquid does not leak out, cover the pot and simmer for 15 minutes.

9. After fifteen minutes, take out the intestines, cool them, and apply some sesame oil on the surface. This way the color and taste will be better.
