Ingredients: shrimp 8, ginger, garlic, scallions, sugar, tomato sauce, soy sauce, salt, cooking wine.
Specific method:
Buy fresh shrimp, cut off the whiskers, claws and mouth neat and beautiful, convenient entrance. Go to the shrimp gun, shrimp whiskers, remove the sand line, and then add a little wine marinade to fishy. Ginger and garlic cut fine (about 1:3), shallots cut section.
Pour more oil into the pot, heat to about 6 or 7%, put in the prawns, quickly turn over. When the prawns turn red on one side, add the scallions and ginger, then flip again.
Reserve a little oil in the wok, stir-fry the ginger and garlic, and over medium heat, add the tomato paste (about 3 tsp), or peeled and chopped tomatoes (just about 3 tsp worth), and stir-fry to bring out the red oil. Pour in the sauce made from sugar, white vinegar, soy sauce and salt, and simmer for about 2-3 minutes.
After 1 or 2 minutes, open the lid, put in the green onion, season with salt, and reduce the sauce over high heat for about 20 seconds.
