How to make rock sugar bergamot paste?
Rinse the bergamot with warm water and soak it in salt water for half an hour. Bugs are easy to hide in the bergamot. If there are bugs, they will escape after soaking. After soaking, rinse with clean water. After cleaning, it is time to dry. I only started working on it the next day.
After drying the bergamot, grate the skin with an oil-free and water-free grater. Do not peel off the skin of the bergamot. The skin of the bergamot contains a kind of bergamot glycerin, which is the best thing about the entire bergamot.
You can also cut it into strips or granules, depending on your preference.
Clean the stew pot and dry it with kitchen paper towels to ensure that the entire process is water-free and oil-free. Seal the lid of the stew pot inside and out with plastic wrap to prevent water from dripping into the stew pot during stewing.
Put a layer of bergamot on the bottom of the stew pot
Then spread a layer of rock sugar. For the rock sugar, use yellow polycrystalline rock sugar.
Then spread a layer of bergamot shreds and a layer of rock sugar on top of the rock sugar, and repeat until the entire stew pot is covered.
When stewing with water, check the water level line of the stew pot clearly. In fact, you can fill the water up to the upper level, but I only fill it between the two. This is to prevent the water from pouring into the stew pot when it boils.
After closing the lid, adjust the function and time. This requires stewing for 12 hours or more. My electric stew pot can only be adjusted for a maximum of six hours, so I have to adjust the time again to complete this stew task.
I bought three kilograms of bergamot, but the stew pot can only stew one kilogram at a time, so I put the remaining two kilograms in fresh-keeping bags and refrigerated them in batches.
This is what it looks like after simmering for four hours. When I added water to the stew pot, I opened the lid and stirred it with water-free and oil-free chopsticks, so that the rock sugar can be evenly dissolved. During the whole process, water was added to the stew pot four times. Please do not stew it at night, otherwise it is enough to add water before you get up. Will add the stewed pictures later!
