Flour Four hundred grams
Baking soda One to two grams

Egg 1 (you can leave it out, and to add the egg you have to add the flour again)

Take the right amount of flour, a family of three to eat a meal a small half pot can be.
Flour in the amount of water, mix into a paste. It's kind of like stirring gluten, but instead of stirring it in one direction, you stir it from the perimeter of the pot to the center. This is to prevent it from actually being stirred into gluten. Stir until the batter is smooth.
Take a pinch of baking soda.
Put it in a bowl and add a little water to dissolve it.
Continue stirring until the batter is smooth.
Add a little water to the batter to prevent it from drying out. Cover with plastic wrap and let rise for two hours.
After rising, add one egg and a pinch of salt.
Continue beating until smooth.
Place the oil in a pan and add some more. The oil layer should be about a centimeter thick.
Pick up the batter with two chopsticks. After one chopstick picks up the batter, the other chopstick continues to pick up underneath the picked up batter.
Repeat this several times to pick up the batter and place it in the pan.
After one side is golden brown, turn over and fry both sides until golden brown.
