Steps to Make Braised Lamb Shanks

Prepare Ingredients. Peel the onions, cut off the dill sticks and tie them into bundles for use.

Wash the lamb shanks and soak them in water for 30 minutes

Rinse the soaked lamb shanks a few more times in water, then put them into a soup pot and pour in water. The water should be 3 fingers over the surface of the meat.

Add a whole onion and increase the heat to high and cook until the water boils

Skim the foam

Add the dill stalks and 1 handful of peppercorns, lower the heat and simmer, covered, for 1 hour. Strain out onions and dill sticks.

While the lamb is simmering, cut the potatoes and carrots into cubes

After the lamb has simmered, add the carrots and cook for 10 minutes

Add the potatoes and cook for a further 10 minutes

Squeeze half a lemon and whisk in a spoonful of the yolks. 11
Add a tablespoon of lamb broth to the egg yolk mixture and stir well, then pour the egg yolk mixture into the lamb broth and mix well

Add salt and cook until the water boils, then turn off the heat
