How to make almond tofu
1. Soak almonds in warm water for half a day and then peel off the outer skin
2. Wash the peeled almonds and put them into a blender, add 200 ml of water, and whisk them into an almond paste
3. Take a piece of clean gauze and spread it on a large bowl. Pour the almond paste into the gauze, strain it, lift up all four edges of the gauze, and then clench it hard. Clench, so that the almond liquid all flow into the large bowl. The almond crumbs that are not completely broken up will remain in the gauze and can be used for other purposes, such as porridge
4. Put the agar in a bowl and soak it in 200 ml of water until it is soft
5. Pour the softened agar and the water into a saucepan and heat it up over low heat
6. When the agar is boiled down, pour in the almond water and the milk and continue to heat it up for a while
7. Put in the rock sugar and boil it until the rock sugar is dissolved. Dissolve the sugar
8. Pour the cooked almond milk into a flat-bottomed container, let it cool down, then cover and refrigerate until it solidifies (you can spread a clean gauze in the container and strain the almond milk to remove the foam)
