Take 200g of yogurt and mix it with 30g of salad oil evenly. The yogurt in this picture is homemade by my little aunt. If you don’t have homemade yogurt, you can buy the original thick yogurt from the supermarket instead. Making homemade yogurt is also very simple: put pure milk and yogurt in a water-free and oil-free sealed box with a ratio of 10:1, then boil a pot of hot water and place them together in an insulating box. The incubating box can be replaced by a foam box, and leave it overnight It's OK, and you can eat it by yourself. If it's not sweet enough, sprinkle some honey on it and it'll be great. Salad oil is used because butter has relatively high calories and can be obtained locally. Friends who like to use butter can also use butter.
Then open the four eggs separately, separate the egg yolks from the egg whites, and put the egg whites into a beating bowl for later use. What you need to pay attention to here is not to break the egg yolk so that the egg white is mixed with egg yolk, otherwise the egg white will be more difficult to pass. The egg yolk is not needed and can be used to stir-fry other dishes. The cake made without the egg yolk will be white. If you like the cake a little yellow, you can add four egg yolks in step 1 and stir together evenly. I usually stir the egg yolks together.
Mix the yogurt, salad oil, and egg yolk evenly, then add 70g of low-gluten flour and stir evenly until there are no lumps, then it is ready.
Then beat the prepared egg whites. You can add a few drops of lemon juice or vinegar before beating to make it easier to beat. While beating the egg whites, add 65g of soft sugar in three batches. Beat the egg whites until they stop running when turned upside down.
Pour one-third of the beaten egg whites into the mixture in step 3 and mix evenly.
Pour step 5 into the remaining two-thirds of the beaten egg whites and mix evenly. This is to make mixing more convenient and even.
Then heat the pot, turn off the heat, pour in cold oil and brush the bottom and sides of the pot. Pour in the mix from Step 6 and shake the pan to make the cake surface as flat as possible. Finally, sprinkle some black sesame seeds to look better and fragrant. Whether to sprinkle sesame seeds or not depends on personal preference.
Cover the pot and cook on low heat for 20 minutes. If it is an induction cooker, you can turn it to the lowest heat and wait for half an hour. Poke the center with a toothpick. If there is no sticking material when you pull it out, it means it is cooked and ready to be taken out of the pan.
