How to Boil Purple Kale

Wash the purple kale, shred it and put it into a blender, add 1:1 water to make a pulp and strain out the purple juice (you can choose not to strain it, and use the purple kale pulp and dough directly.)

Prepare the flour. (Medium and high gluten are fine.) Use the purple juice to mix the dough, adding it little by little so that the ratio of water to water doesn't get out of whack. The dough should be a bit stiffer than what you would use for buns

Cover the dough with plastic wrap and let it rise for 15 minutes

Make the dough again. After kneading the dough well, use scissors to start cutting the dough, don't cut too big a piece, or it will be pinched when cooking

The cut dough can be directly put into a pot of boiling water, and cook while cutting; or you can cut it in a plate, sprinkle it with dry flour after cutting, and shake it well. This way they won't stick to each other. You can also store them in the refrigerator

Season them to your liking. I added salt and olive oil to the eggs; I made them hot and sour for myself. I put vinegar, chili and sesame oil
