Sugarcane and beet are used as raw materials (one-step method) or raw sugar is used as raw materials (two-step method), and it is obtained by squeezing juice, filtering, removing impurities, clarifying (raw sugar is not needed in the above steps), vacuum concentrating and boiling crystals, removing honey, washing sugar and drying. White granulated sugar is the most important variety of edible sugar. In foreign countries, almost 100% of edible sugar is white granulated sugar. In China, white granulated sugar accounts for more than 90% of the total edible sugar. White sugar is divided into refined, excellent grade, first grade and second grade.
Single crystal rock sugar
The white sugar is heated and dissolved in proper amount of water, filtered, put into a crystallization tank to make the sugar solution supersaturated, put into seed crystals for crystal cultivation, taken out for honey removal and centrifugal drying after the crystal grains are grown, ventilated, dried, screened, classified and packaged.
Polycrystalline rock sugar
The white granulated sugar is put into a proper amount of water to be heated and dissolved, and the sugar is boiled. After reaching a certain concentration, it is input into a crystallization basin. After growing the crystal in a crystallization chamber for one week, the mother liquor is taken out and controlled completely. After removing the sand bottom, it is crushed and dried, and packaged in different files.
The sugar concentration in rock candy is high, so rock candy is sweet.
