Method
1. Peel the chestnut pulp out
2. Cut the pork belly into 1.5 cm squares Put the pieces into a pot, blanch them in cold water, take them out and set aside
3. Put a little oil in the pot and fry the rock sugar
4. Fry the sugar until it is brown
5. Pour in the blanched meat
6. Stir-fry for 2-3 minutes to fry out a little of the fat in the meat
7. Add the chestnuts
8. Add boiling water to cover the ingredients, and pour in the braised soy sauce at the same time. Bring to a boil over high heat and then reduce to low heat
9. Cook over low heat for about half an hour
10. Add ginger and continue to simmer 10 minutes
11. Add special soy sauce. Special soy sauce is very salty, so you don’t need to add salt. You can also use light soy sauce instead of special soy sauce.
