Braised eggplant (super simple and delicious)
Cut eggplant into hob pieces and coat with dry starch. Slice garlic for later use.
In a small bowl, add salt, sugar, vinegar, soy sauce, starch and water and stir to make juice.
Put oil in the pan and fry the eggplant.
Pour the excess oil out of the pot and leave as much oil as usual for cooking. Put garlic slices in the pot, add fried eggplant, stir fry a few times, pour in the prepared juice, thicken and serve.
