The stinky mandarin fish is cleaned with fresh mandarin fish, put it in a wooden bucket, put a layer of salt on it, then press it with a big stone, and turn it once a day to ensure even taste. 2. Braised turtle with ham

Maodoufu is a specialty in Tunxi and Xiuning, Anhui Province, which is different from stinky tofu and bean curd. 5, knife board incense
Knife board incense is a very popular dish in various Anhui cuisine restaurants. Fresh pork is marinated in a jar for more than a month, then fished out, washed with hot water, dried in the sun until it smells salty, then cut into large pieces, cooked in a pot and eaten in small pieces while it is hot.
