3. Then, put a little pepper, cooking wine and a few slices of ginger in the bowl, stir them evenly with chopsticks, marinate for 5-8 minutes, and then sprinkle a proper amount of dry starch until the surface of prawns is evenly coated with powder.
4. Boil the oil in the pot. When the oil is heated to 50%, put the prawns wrapped in powder into the pot and fry until golden and crispy. Take them out. After controlling the oil separation, put them back in the tray for later use. Frying is a prerequisite for crispy and spicy shrimp.
5. Leave a little base oil in the pot, first add a little onion and garlic cloves, stir fry with low fire, then add a proper amount of dried pepper, pepper and bean paste, then add a little celery, stir fry until it is broken, then pour in the prawns that have been fried in advance, turn to high fire and stir fry quickly and evenly.
6. Finally, add a little salt, chicken essence, sugar and soy sauce to taste. Add a little parsley at the same time. If you like spicy food, you can add 1 spoon of Chili oil, stir it quickly and evenly, and sprinkle some sesame seeds, and then you can go out of the pot and put it on the plate.
