Steps
1. Slaughter the loach and remove the internal organs.
2. Cut tofu into cubes and soak in lightly salted water.
3. Pour oil into a frying pan and stir fry onion, ginger, garlic and chili.
4. Pour in the loach and stir fry.
5. Drizzle in white wine and stir fry.
6. Add appropriate amount of water and dark soy sauce.
7. Add a little sugar.
8. Boil on high heat and skim off the foam and cook on low heat for 10 minutes.
9. Then add the tofu to open high heat and simmer for 5 minutes.
10. Add salt to taste.
11. Drizzle in water starch to thicken.
12. Boil the soup thick turn off the fire.
Tips
The loach can be sold in the place to let the boss slaughter good.
Burning loach with white wine not only removes its earthy odor, and loach flavor is more delicious.
Bean curd soaked in lightly salted water can remove the smell of beans and stewing is not easy to crumble.
