(2) After the sea cucumber becomes soft, take out the drained oil, then wash off the greasy surface of the sea cucumber with alkali, and finally put it in a boiling pot for stewing until the sea cucumber swells, and then take it out and remove the intestines.
(3) This method of soaking in dry sea cucumber is rarely used now. First, the yield is low (500g dry sea cucumber can only soak 2-2.5kg). Secondly, the degree of oil immersion in dry sea cucumber is difficult to master. Thirdly, it is difficult to wash the sea cucumber after soaking in oil. Fourth, it often happens that it melts when soaking.
2, pure water dry sea cucumber method:
(1) Wash the skin of dry sea cucumber with clear water, and then soak it in clear water for about 8 hours. After the sea cucumber becomes soft, take it out and put it in a cold water pot and cook it with slow fire for about 5 minutes. Leave the fire and soak for about 8 hours.
(2) Take out the sea cucumber, cut the abdomen with scissors, take out the ligament in the abdominal cavity, then wash it with clear water, put it in a cold water pot again, boil it with slow fire for 5 minutes, and then soak it for 8 hours. Repeatedly changing the water for three or four times can completely remove the astringency and other bad smells of sea cucumbers, and the sea cucumbers can be fully soaked in about two days.
(3) When dry sea cucumber is made of pure water, the most important thing is never to touch alkali, oil and salt during foaming. Because alkali and oil can make sea cucumber rot and melt, and salt can prevent sea cucumber from appearing completely.
3. Evaporation methods in dry sea cucumber:
(1) Wash the skin of dry sea cucumber with clear water first, and then soak it in boiling water for about 3 hours to soften the dry sea cucumber.
(2) Change into clean boiled water, add an appropriate amount of borax (generally 500g dry sea cucumber, borax100g), seal with plastic wrap, and steam in a steamer for 3 to 4 hours.
(3) Take out the steamed sea cucumber, rinse it with clear water, and then soak it in clear water until the sea cucumber is completely expanded.
