Main ingredients: 1000g of hawthorn, 300g of rock sugar, 300g of purified water, 300g of vinegar, a little vinegar
Step 1: Prepare all the ingredients. Put the hawthorn in a bowl and clean the surface dust. Pour in appropriate amount of water and edible salt and soak for 15 to 20 minutes. The purpose of soaking with salt is to remove 80% of pesticide residues in hawthorn, but the soaking time should not be too short or exceed 20 minutes, otherwise it will cause white blisters.
Step 2. Wash the soaked hawthorn again with clean water and dry the surface moisture with kitchen paper. Then remove the hawthorn stalks by hand and put them in a bowl for later use.
Step 3. Pour the purified water and 150g of white sugar prepared in advance into the pot. Cook the sugar over low heat until it melts. When the sugar water begins to bubble, cook over low heat until the sugar water bubbles densely. Pour the prepared white vinegar into the small bubbles and stir evenly, turn off the heat. To judge whether the sugar water is cooked well, in addition to seeing whether the sugar water changes from large bubbles to dense small bubbles, there is also whether the color of the sugar water changes from white to light yellow.
Step 4. Pour the hawthorn in, there must be no water!
Step 5: Stir quickly to coat each hawthorn with syrup.
Tips
Keep the heat on medium throughout, and be sure to stir slowly and continuously, otherwise the snowballs may not be white!
