Noodle fish is a common kind of pasta in northern summer, and it is also called "Guo Zou (the pronunciation of tadpoles in dialect)" in some dialects in northern China. It is shaped like a small fish or a tadpole. In the early days, noodle fish was mainly made of corn flour, but now noodle fish is mainly made of wheat flour. Compared with noodle fish, the technology has been greatly improved and the taste has been improved a lot. Being able to make smooth and delicious noodle fish with a single flour can also be said to be a great contribution of northerners in pasta culture.
Production method
(1) and noodles. Like making handmade noodles, first put wheat flour into a basin, add appropriate amount of alkaline noodles, add water and stir, and knead into a hard dough.
(2) washing pulp. Wash the dough into a paste by adding water in a large pot or porcelain basin, until the fibrous things are left (which can also be made into delicious food).
(3) boiling. Pour the washed flour paste into the pot. If the flour paste is too thin, let it settle for a while, properly remove the clear water from the upper layer, and then pour it into the pot to cook until it is thick and paste (of course, make sure it is cooked first). The first three steps are the same as making bean jelly.
(4) The step of noodle fish molding. Put the "well" rack on the basin or pot filled with cool clean water, and put a leaky basin with a uniform round hole at the bottom in the middle (you can also replace it with a leaky spoon with a larger hole). The larger spoon will scoop the boiled thick paste into the leaky basin, and slide and squeeze it in the middle of the leaky basin to let it pass through the round hole, so that smooth noodle fish will fall into the clean water.
(5) Stir vinegar or syrup, stir-fry some side dishes, and prepare garlic paste, chili pepper.
(6) After the noodle fish is cooled, scoop it up with a colander, remove the water inside, pour it into a bowl, and add various prepared ingredients to make a bowl of cool, smooth and delicious noodle fish.
