Shanxi pasta has a long history, which can be tested for more than 2000 years. Noodles were called "boiled cakes" in the Eastern Han Dynasty, "soup cakes" in Wei Jin, "water introduction" in the Southern and Northern Dynasties, and "cold scouring" in the Tang Dynasty.
