Prepare the ingredients. Remove the amaranth roots and yellow leaves. Wash the old leaves and drain them. Put the preserved eggs in boiling water. Cook for 5 minutes, take out and set aside.

Heat oil in a pot, add in the picked and washed amaranth and stir-fry.

Tips
Boil the preserved eggs in a pot so that they are less likely to rot when peeled.
