How to make eggplant stewed with beans
Ingredients
Cowpea, eggplant, garlic, pork, red bean paste, chili, white sugar
Method
1. Pick and wash the cowpeas, remove the heads and tails, and cut into long sections.
2. Wash the eggplant and cut it into the same length as the cowpea.
3. Put it in a pot, add light salt water and soak it until ready.
4. Heat appropriate amount of cooking oil in the pot, pour in the eggplant strips and stir-fry.
5. Stir-fry the eggplant strips until soft and translucent, then serve.
6. Leave some oil in the pot, pour in the cowpeas and stir-fry.
7. Stir-fry the cowpeas and set aside in the same way.
8. Heat a little oil in a pot, add garlic, chili, and onion and saute until fragrant.
9. Chop the pork, mix with a little salt, add to the ingredients in step (8) and stir-fry until cooked, add a tablespoon of red bean paste.
10. After the bean paste is stir-fried to produce red oil, add the previously stir-fried eggplant strips and cowpeas.
11. Stir well and add water starch.
12. When the soup is thickened, it is ready to be served.
