Therefore, noodles are synonymous with Youxi cuisine. There is even a saying that you have never been to Youxi without tasting noodles. Even Youxi people who have left their hometown for a period of time will miss the taste of noodles.
The generalized method is very simple.
First, make flour into dough, compact and roll it to about 5 mm, fold it into strips, and then cut it into long strips with a special knife about 70-80 cm. Blanch the long noodles in a hot water pot, take them out and put them in cold water for cooling. After taking them out, rub them into balls according to roughly the same amount, and drain the water for later use.
When you want to eat, put the noodles into the boiling hot water pot. Boil for two or three minutes, take it out with a colander, shake it a few times, drain the attached water, put it in a sea bowl, add seasoning such as cooking oil, salt, monosodium glutamate, soy sauce, garlic vinegar and chopped green onion, and stir well. A bowl of appetizing dry mixed noodles is ready.
If you order this snack in a snack bar, the store will also provide a bowl of steaming soup. The soup is made of peeled pig's head and tastes sweet and delicious.
There are many ways to eat noodles, not limited to dry mixing, but also fried. Some people like to add some auxiliary materials and cook directly.
Noodles are named for their huge size, but there have always been various naming methods. Because noodles are cut with a special knife, they are also called "sliced noodles"; The thickness is similar to that of chopsticks, also known as "chopsticks noodles"; Before eating, circle into a ball, also called "meatball noodles"; Shaped like a round cake, it is cooked in hot soup when eating, also called "soup cake noodles"; As a birthday noodle, it was used in Zhu's "washing three denier" banquet, also called "Zhu Zi noodle". But in any case, Youxi people still like to call it "big noodles".
Noodles are the favorite snacks of Youxi people, especially some office workers who are too lazy to take care of breakfast and always go into the snack bar to order a bowl of noodles.
A bowl of noodles is served, and the hot air is fragrant. Pick up the noodles with chopsticks, put them in your mouth and suck hard. With a "slip", they were all hot and drooling. Some people will order two or two pieces of pig's head meat, or a few pieces of dried tofu, or a marinated egg, and eat it with more relish.
It's been around for thousands of years. According to some data, Japanese udon noodles originated from Youxi noodles, and were brought back to Japan from China by the Japanese monk Konghai in the Tang Dynasty. In the data, udon noodles are called "Daoxiao Noodles".
Master Kong Hai is from Kagawa, Japan. After he came back from China, he popularized the practice of udon noodles in his hometown. Diners who have eaten Xiangchuan udon noodles and Youxi noodles at the same time say that the practice and taste are very similar.
According to the records of Kaiyuan Temple in Fuzhou, Master Kong Hai drifted to Xiapu County due to typhoon at sea, and then lived in Kaiyuan Temple in Fuzhou. It was analyzed that Master Kong Hai traveled back and forth to Chang 'an, passing through Youxi, and saw a wide way, so he brought it back to Japan.
Another way of saying it is that there was a waterway from Youxi to Fuzhou in the Tang Dynasty, which ended in Youxizhou, not far from Kaiyuan Temple. Minjiang River flows through Youxizhou and is divided into two tributaries, north and south, and the south tributary is called Wulong River. When Master Kong Hai lived in Kaiyuan Temple, he met noodle cooks in Youxi, learned how to cook noodles, and took them back to Japan. Because of the language barrier, the name of the Wulong River next to Youxizhou was called "Oolong Noodles", and later it was called "Wudong Noodles".
Everything is a coincidence. If Master Kong Hai hadn't met a typhoon at sea, he wouldn't have become attached to Fuzhou, and there would be no connection between "big noodles" and "udon noodles". Coincidentally, the pronunciation of "Youxi" is very similar to the pronunciation of "delicious" in Japanese. Is this really just a coincidence? After all, noodles are really delicious!
