500g of dried salted fish, 2 garlic sprouts, 3 garlic cloves, 3 ginger slices, 5 dried red peppers, proper amount of edible oil, yellow wine and salt.
2. Step:
(1) Wash and chop garlic seedlings, dice garlic cloves, chop ginger, and chop dried peppers for later use. Parents who like spicy food can put more dried red peppers.
(2) Dry salted fish must be soaked in warm water, so that the fish is soft and easy to wash, and then cut into small pieces with a knife and drained.
(3) In case of fire, put cooking oil into the pan, put the cut dried salted fish into a cold oil pan, and set it for frying. When frying fish, you must not fry them on top of each other. Try to fry every fish thoroughly.
(4) If the back of the fish is brown, turn to the other side and continue frying. Turn down the fire at this time, or the fish will burn easily.
(5) When both sides of the fish are browned, add yellow wine, dried red pepper, garlic cloves and ginger and stir fry together.
(6) After stir-frying for a while, you can add salt and appropriate amount of water. Dried salted fish had better drown with less salt. Dried salted fish is salty in itself. Cover the pot and stew.
(7) When the stew is quick-drying, sprinkle with garlic sprouts and stir-fry.
