Shandong provincial government officially approved and published the third batch of provincial intangible cultural heritage list. Among the nine selected items, San, a famous snack representing Linyi's traditional food culture, was selected into the intangible cultural heritage list.
It has a long history. In Shuo Yuan Zayan, there is a record that "you don't eat for seven days, but the quinoa soup is not bad". In the Spring and Autumn Period, the famous book Mozi is not a Confucian, which says: "Confucius is poor in Chen Cai, but the quinoa soup is not bad".
The Book of Rites said, "Here, take the meat of cattle and sheep, and cut it into small pieces. Combine it with rice 2 and meat 1, and fry it. " The "San" mentioned here is quite similar to that of today. During the reign of Kangxi in the Qing Dynasty, there were "San Shi" among the 16 products listed in Yizhou Zhi.
The introduction of Nao is as follows:
According to legend, San was a breakfast drink for people in the ancient western regions. Tang Jin was introduced to the mainland, while Linyi San was introduced from the Yuan Dynasty (now Beijing). It is said that it was a breakfast food for Hui people in the ancient western regions. At first, a couple of Hui people in the Yuan Dynasty came to Linyi for business, and it was called "meat paste" at that time. Later, more and more imitators came.
It was designated as "San" in the Ming Dynasty. Later, the local people called this kind of meat porridge "San". Before the liberation, there were eight restaurants in Linyi City, among which the chicken and beef restaurants in Huangjia, Liujia and Wujia were the most famous.
1946, when Comrade Chen Yi was stationed in Linyi, he was a frequent visitor to Huangjiasan Shop. At present, there are dozens of famous San shops in Linyi city, and small and medium-sized San shops are blooming everywhere, and Linyi San Museum has also been opened in Shanghai, Qingdao and other places. Shanghai International Hotel and Jinan Nanjiao Hotel hired Linyi's naan technicians, respectively, which made the naan famous. Since then, it has also been known by everyone and has been passed down to this day.
As follows:
In the Eastern Jin Dynasty, a poor couple from other places fled to Linyi. Wang Xizhi, a great calligrapher at that time, saw that they were very poor and often helped them. The couple were very moved and had nothing to repay. Once, when Wang Xizhi was ill, they thought it was time to repay the debt, so they killed the only hen that laid eggs at home to make soup, and added some common Chinese herbal medicines to the soup.
