Extension: Douchi can be divided into black Douchi and yellow Douchi. To make black lobster sauce, black beans should be washed and soaked for more than eight hours, then cooked in an electric cooker, put into a bamboo dustpan, dried in the sun, dried in the shade, fermented, washed and dried, added with salt and appropriate amount of rice wine, mixed evenly, put into a glass bottle or porcelain, properly sealed and eaten in about two months.
