The first kind: lettuce
Lettuce and "making money" are homophonic, meaning rich and auspicious, promoting to a higher position and making a fortune. In the north, lettuce is more often served in oyster sauce, which is nutritious and delicious, meaning auspicious.
Practice: 1. First, blanch the washed lettuce for a few minutes, then remove it and control the water; 2. Then mix the juice separately in the bowl, add the light soy sauce, dark soy sauce, oyster sauce, salt, garlic and white sesame seeds, sesame oil and starch water and stir; 3. Then heat a little oil in the pot, stir-fry the oil until it is thick and pour it into the lettuce.
The second type: hair cake
Different from rice cakes in the south, steamed cakes are eaten in some places in the north during the Lantern Festival, and they are also made into cakes. Because "cakes" and "heights" are homophonic, making cakes means rising step by step, getting rich, auspicious and prosperous.
Practice: 1. Soak the red dates with clear water and steam them in a pot for about a quarter of an hour. Press the red dates with a spoon to remove the mud, discard the jujube stones, and add sugar to the jujube paste and stir well; 2. Put corn flour and flour into the pot, melt the yeast with warm water, then add in, and continue to add a little baking powder and baking powder, in order to increase the fluffy feeling of the hair cake, pour in the stirred jujube paste, add some warm water to mix the dough, and start to wake up. It's cold in winter, so you can put it in the pot when you wake up, with less hot water to raise the temperature for fermentation, or you can use the oven to ferment it faster, which can be fermented in about half an hour; 3. After the dough is fermented, open the fire and steam for 40 minutes.
The third kind: noodles
The reason why we want to eat noodles during the Lantern Festival is because there is a saying among the people: "Put on the lantern festival, put down the noodles, and look forward to next year after eating." Eating noodles during the Lantern Festival means that the coming year will be long, smooth and good luck. The Lantern Festival is in the freezing season, so come to a bowl of steaming noodles to warm your stomach.
The method is very simple. Generally, you will make tomato and egg noodles, 1. Put oil in the pot, and fry the eggs first. 2. First cut some shredded onion, saute until fragrant, then pour in diced tomatoes, stir-fry the sauce slowly, then stir-fry it with eggs, add seasoning, and add garlic seedlings to enhance fragrance; 3. Add water to boil, add noodles, remove and pour in fried tomato and egg topping.
The fourth kind: eggs
As a well-known food, eggs are often easily overlooked. I don't know that eggs are also one of the traditional foods, and it is easy to appear on the table of the Lantern Festival, because the shape of eggs is similar to a circle, and it has the inherent meaning of being round, beautiful and complete.
There are quite a lot of practices about eggs, so I won't state them again. You can fry, cook, fry and eat according to your own preferences.
The fifth kind: fish
Fish is not only eaten in the New Year, but also on the table of the Lantern Festival. As the saying goes, "No chicken can make a feast, no fish can make a table". Fish means a rich life, like a duck in water, and many children are blessed, so eating fish in the Lantern Festival is auspicious.
There are quite a lot of practices about fish. Generally, it is good to have a braised fish. 1. First, clean the fish, cut it with a flower knife to make it easy to taste, and marinate it with soy sauce, salt, cooking wine and spiced powder. 2. Heat oil in the pan, stir-fry chopped green onion and minced garlic with oil, add Chili oil, oyster sauce, soy sauce, thirteen spices, red Chili sauce and a little salt, and add two bowls of water to start stewing fish; 3. After stewing for 20 minutes on medium and small fire, it will be changed to a big fire, in order to collect the juice as soon as possible, and then put it on a plate and sprinkle chopped green onion.
The above five traditional cuisines have been introduced. They appear frequently on the table of Lantern Festival, but not everyone has eaten them. Which ones have you eaten?
