(1) Fish, shrimp and crab are rich in protein, with the content as high as 15%~20%, and shark fin, sea cucumber and scallop contain more than 70% of protein. In addition, the essential amino acid composition of fish protein is similar to that of meat, so it has high physiological value and belongs to high-quality protein. Fish has slender muscle fibers, soft tissue protein structure and high water content, so its meat is tender and easy to be digested and absorbed by human body, which is more suitable for patients, the elderly and children.
(2) The fat content in fish, shrimp, crab and other aquatic products is extremely low, only 1% ~ 10%, that is, 1% ~ 3%, and most of them are composed of unsaturated fatty acids, which are easy to be digested and difficult to cause arteriosclerosis, and are more suitable for the elderly and cardiovascular patients.
(3) Fish fat is rich in vitamins A and D, especially in fish liver. Fish also contains a certain amount of nicotinic acid and vitamin B 1.
(4) Aquatic products also contain inorganic salts such as calcium, scale and potassium. Marine plants such as kelp and laver are also rich in iodine and iron.
