The Nun's Version
The story goes that some early vegetarian nuns made an egg-white almond cake baked with egg whites and almond meal as a substitute for meat, and this was the prototype for macaroons. Today's macaroon is derived from the Italian word maccarone (delicate dough).?
During the French Revolution, Catholicism was suppressed by the revolutionaries and the clergy suffered. The nuns secretly sold their macaroons to make ends meet, gradually spreading them to France.
The Homesick Version
In the mid-16th century, the Florentine nobleman Catherine Medici married King Henry II of France. Although in the royal family, but after all, married far away from home, the queen soon suffered from homesickness. So, follow the queen to France, the chef made home macaroons to win the queen's heart, from this Italian-style desserts spread in France.?
