Steps
1. Prepare a bitter melon.
2. Cut in half, remove flesh and cut into strips.
3. Slice the beef fillet transversely in a semi-thawed state.
4. Marinate the cut beef fillet with thirteen spices, light soy sauce, sugar, cornstarch, and olives for preparation.
5. Prepare tempeh, ginger slices, green onions and garlic.
6. Heat the pan, pour in the olive oil, add the ginger slices and scallions and wait until the aroma is released.
7. Pour in the marinated beef.
8. Pour in a little light soy sauce, stir-fry over high heat, and serve.
9. Pour in the tempeh and garlic and just stir-fry until fragrant.
10. Add a little more olive oil to the pot and pour in the cut bitter melon.
11. Stir-fry evenly, add appropriate amount of boiling water, cover the pot and simmer for a few minutes until the bitter melon is soft.
12. Pour in the tempeh and garlic again.
13. Pour in the fried beef and ginger and green onion.
14. Stir-fry evenly, add appropriate amount of salt and sugar and turn off the heat.
Tips
When frying bitter melon, I always add a little sugar to neutralize the salty and bitter taste. In addition, the bitter melon is fried over high heat and then simmered in boiling water to make it softer and more delicious.
