1, wash the sheep spine with clear water, and cut the mutton into strings of the same size. Then soak in warm water for 2 hours. The purpose of this is to soak the blood, and then try to keep the mutton moist, so as to keep the mutton fresh and tender during barbecue.
2. After the mutton is soaked for 2 hours, take it out. After controlling the moisture, pour the salt and cooking wine into the meat and mix well. Let the mutton fully marinate 1 hour.
3. Salted mutton kebabs need to be washed quickly with warm water and then baked in the oven. It doesn't matter if you wash it quickly with water. Most of the cooking wine and salt have been marinated in the meat. The purpose of boiling water is to easily bake cooking wine onto the meat surface during barbecue. There is another reason to remove the cooking wine on the surface, that is, there is water on the surface of the meat, and the meat will not burn quickly. If there is more water in the meat, the meat inside will turn into steam when roasting, which will make the meat tender and delicious.
Pickling technology of electric roasted mutton (beef can be referred to)
1. First, cut the mutton into pieces with moderate thickness, put them in a pot, and soak them in salt, chicken essence, black pepper, onion, ginger, garlic, shredded onion, apple powder, honey, soy sauce, wine, white vinegar, eggs, dried tangerine peel, cumin powder and spiced powder for one night.
2. Buy fresh mutton, bamboo sticks (optional type: iron) and seasonings: cumin powder, Chili powder, salt, tomato sauce and so on from the supermarket. You can choose according to your own taste. Marinate the kebabs and minced onions for half an hour before roasting. Add eggs, monosodium glutamate, Chili oil, pepper oil, sugar, soy sauce and sesame oil, stir and simmer for about 30 minutes.
The amount of spices to be added to 3.5 kg of fresh meat: formula 1:10.5 package of Xinjiang mutton kebabs (produced in Wuhan), 70-90g of monosodium glutamate (the freshness is 99%, all the following are used), 36g of refined salt, and special fresh mutton1package (produced in Wuhan).
4. Knead thoroughly with salt, add pepper and lemon juice and marinate for one night, then pour in garlic barbecue sauce, mix well and marinate for half an hour, and you can use it for barbecue!
The practice of chicken wings
Ingredients: 10 chicken wings, honey, soy sauce, salt, cooking wine (red wine is also acceptable), ginger, dried red pepper, spiced powder and black pepper.

If it is quick-frozen chicken wings, please thaw them first. Put 10 fresh chicken wings into a container that can be heated by microwave oven.
Add a small amount of soy sauce and put 2 spoonfuls of soy sauce.
Add cooking wine or red wine, about 2 tablespoons, mainly to remove the fishy smell of chicken wings.
Add salt, a little ginger foam, a little pepper seeds, a little spiced powder (usually sold in supermarkets) and a little black pepper.
Stir the chicken wings and seasoning evenly, and fully stick the seasoning.
Cover with chicken wings and marinate in the refrigerator. On TV, it is best to spend the night (so be sure to prepare in advance, instead of eating and cooking now. If it's really urgent, it will take 2-3 hours to fully taste.
