How to make handmade pasta ?

Start mixing the pasta, at first it will not be shaped, slowly and patiently kneaded will become softer and softer, kneaded until the three light (basin light, hand light, surface light) and then cover and relax for 20 minutes.
If you have a pasta press, turn it on 1, the widest setting, and start pressing the dough repeatedly. Fold the dough in half and press repeatedly until the surface is free of any particles and the dough becomes softer and smoother.
Gradually reduce the width of the press, switching to a smaller gear every two presses. (The crust will become longer, so you can cut it in half with a knife and continue pressing.) Press until the crust is a little translucent.
I forgot to take a picture of the cutting process, so here's how to do it: flatten the pressed noodles on the counter, dust them with dry flour, fold them in half, dust them again, fold them in half again, and then cut them with a knife to the desired width. Once all the noodles are cut, sprinkle them with dry flour, shake them out, and wait for the water to boil before cooking.
