Production method:
1, add a little refined salt and alum to the flour, add clear water in stages, stir well by hand while adding water, grab the dough with your hands and shake it repeatedly until the clear water is added and the dough is not sticky to your hands or pots.
2. Clean the flat pan with heat, then slightly rub some peanut oil, grab a piece of noodles with your right hand, and spread it into a round slice with a diameter of about 10 cm in the flat pan (when sticking the noodles to the pan, you can lift the noodles round and round by hand), and take it out when the skin is tilted around and the surface is dry, that is, the spring cake skin is obtained.
3. Wash the leek and cut it into 3 cm long sections: soak the silver buds in boiling water and remove the purified water; Sliced pork is pulped with starch and clear water, put into a warm oil pan (heated with peanut oil), spread and smooth thoroughly, and pour into a colander to control the net oil.
4. When the frying spoon is on fire, add lard to heat it, add shredded fat, barbecued pork and shredded mushrooms to stir well, then add smooth shredded pork, cooking oil, salt, soy sauce, white sugar, pepper, sesame oil, fresh soup and monosodium glutamate, stir well with starch after boiling, take it out of the pot and let it cool, and then add leek and silver buds to stir well to get the spring cake stuffing.
5. Spread the spring cake skin flat on the chopping board, put the spring cake stuffing into it, wrap it into a long flat shape, and stick the sealing place with thin batter to seal it tightly.
6, pour the flat pot into peanut oil, put the spring cake into the pot and fry it on medium heat until both sides are golden yellow.
Commemorate history
According to legend. 1652, Zheng Chenggong, who fought against the Qing court, besieged Zhangzhou, Fujian Province. From March to October, the siege lasted for seven months. By the time of clearance, 730,000 people died in Zhangzhou, and only one or two hundred people survived in the city (some old people in Zhangzhou called it "Zhangzhou Massacre").
At that time, the bodies in the city were in a terrible state. Therefore, in order to commemorate this painful history after the war, the surviving people used spring cakes as straw mats to wrap their bodies and ate them during the Qingming period to show that they would not forget, which has been passed down to this day.
