Step 1: Beat the eggs into a bowl and add some salt and cooking wine. When we steamed eggs, we only put a little salt to taste, but it was not enough.
Because eggs are fishy, steamed eggs will smell worse. If you only add salt, the fishy smell can't be removed. Let's put some cooking wine in it. Cooking wine can remove the fishy smell of eggs, and steamed eggs will not smell even if they are cooled.
Step 2: Add warm water and stir. When many people steam eggs, they pour cold water into the egg liquid for convenience. Such a simple operation will make the eggs produce fishy smell and bubbles. If warm water is added, it will make the egg liquid more tender and eliminate small bubbles to the greatest extent.
Note: when we put warm water, we need to put it with eggs in the ratio of 2: 1, so that the entrance of eggs will be smoother and tender. It is when we steam eggs that the proportion of drainage is actually very important. When the eggs are put into the bowl, they should be stirred clockwise with warm water, and the direction cannot be changed. Otherwise, there will be many bubbles. Adding cold water will make our steamed eggs hard and get old, which will affect the taste of food.
Step 3: filter with a strainer. Many people stir well when steaming eggs, and they will steam them directly in the pot. Actually this is very wrong. The eggs we stir have many small bubbles, which will make the eggs look ugly after steaming and the entrance is not so tender.
After the eggs are mixed evenly, we cover the bowl with a layer of plastic wrap and stick a few small holes. Actually this step is very important. If you don't cover the plastic wrap, many honeycombs will appear on the surface of the steamed eggs, which is not delicious.
Step 4: Put hot water on the pot. Many people put cold water in the pot when steaming eggs, but this will make the eggs mature slowly. When the cold water is steamed all the time, it will also give off the fishy smell of eggs. So when you steam eggs, you'd better put hot water in the pot, which will not only shorten the time of steaming eggs, but also make the fishy smell of eggs evaporate quickly and won't stay in the pot all the time.
