Rum is a foreign wine made from sugarcane molasses. There are many kinds of rum, which can be divided into different types according to different raw materials and different brewing methods. The main types of rum are:
1, classified by features
(1) Silver rum: Also known as rum, it refers to rum that needs to be filtered by activated carbon after distillation and aged in barrels for more than one year. This wine is dry and has no strong taste.
(2) Golden Rum: Also known as amber rum, it refers to the rum that needs to be aged for at least three years in old oak barrels with charred inside after distillation. The wine is dark in color, slightly sweet in taste and rich in flavor.
(3) Black rum: also known as red rum, refers to the rum that needs to be added with a certain amount of spice juice or caramel toner in the production process, and has a strong wine color (dark brown or reddish brown) and mellow wine flavor.
Step 2 classify by taste
(1) Light rum: colorless, delicate and light, often used as the raw material of cocktail base wine and other drinks.
(2) Neutral rum: In the production process, water is added to molasses to ferment it, and then only the clarified juice floating on it is distilled and aged. Mix it with light rum or strong rum to an appropriate degree before selling.
(3) Strong rum: In the production process, let molasses ferment for 2-3 days, add the residue left by the last distillation or bagasse for fermentation, or even add other spice juice, put it in a single distiller, distill it out, and then inject it into oak barrels baked for several years.
3, according to the smell classification
(1) Luzhou-flavor rum: sugarcane sugar is clarified first, then butyric acid-producing bacteria and alcohol-producing yeast are inoculated, fermented for more than 10 days, and distilled in batch tanks to obtain about 86% colorless original rum, which is blended into golden yellow or light brown finished wine after being stored in wooden barrels for many years.
(2) Fen-flavor rum: Only yeast is added to cane sugar, so the fermentation period is short. Tower continuous distillation produces 95% of the original wine, which is stored and blended into light yellow to golden yellow finished wine.
4. Classification by place of origin
It can be divided into Cuban rum, Jamaican rum, Dominican rum, Haitian rum, Guyana rum, American rum, Brazilian rum and so on.
