Wash lotus root, peel and slice.

Boil the lotus root for three minutes.

Cook until it cools and turns white.

Shred coriander, garlic and pepper.

Put coriander, half garlic and pepper into lotus root, and add some salt, sugar, vinegar, soy sauce and sesame oil.

Heat the oil in the pan, and stir-fry the other half of garlic and pepper until the oil smokes.
