How to make vegetarian pepper noodles with mixed sauce?
The first and most important thing to do is to fry the sauerkraut. The selected meat should be fat and lean, and ask the boss to chop it into pea-sized pieces so that it has a grainy texture. Add ginger to remove the fishy smell and enhance the aroma.
Heat the pan with cold oil, stir-fry over medium-low heat in the pan, and use a spatula constantly. Break up the minced meat to make the sauerkraut particles distinct. Stir-fry until the minced meat changes color, add appropriate amount of white pepper, Sichuan pepper powder, light soy sauce and vinegar, and stir-fry until fragrant.
Fry slowly over low heat. You will see the minced meat spitting oil and the fat bubbling around. You can add a little bit of water halfway through, just a little bit, to prevent the sauerkraut from being too burnt due to lack of water. Stir-fry until the fat is caramelized and fragrant, and the sautee is ready.
The noodles of vegetarian pepper mixed sauce noodles are alkaline noodles from Chengdu. You need to buy stick noodles, which are noodles as thick as willow branches, so that you can taste it.
While the noodles are cooking, start making the seasoning. Adjust the sesame paste to a consistency that is easy to mix, add soy sauce, vinegar, sugar, chili oil, Sichuan pepper powder, pepper, and salt and mix thoroughly. I don't have much chili oil, just a little bit.
Cut the green peppers, coriander, shallots and garlic into the same size as minced meat, stir in the sauce, add the fried saozi, remember to add the oil at the bottom of the pot too, it will be more fragrant~
When the noodles are cooked until they are a little hard, you can turn off the heat. The noodles will be boring if they are too soft. Take the noodles out of the pot, put them into a bowl and stir well. If you feel it lacks any flavor, just add more according to your preference~
Tips
1. Sesame paste, sesame paste can also be used. It is prepared with peanut butter at a ratio of 1:1;
2. For soy sauce, light soy sauce is used at home. If you want to have more flavor, you can cook it with spices and light soy sauce yourself to make boiled soy sauce, which has a richer taste. ;
