(A) Cornmeal Wo Wo Tou Method
Ingredients: cornmeal 200g, water 140g, baking powder 2g, steamer 1pc,
Steps:
Cornmeal 200g weighed
Water 140g
Water boiling to 100 degrees
Water pour into the cornmeal and mix well
Put in water to 100 degrees
Water boiling to 100 degrees. p>Baking powder 2g
Boil water to 100 degrees
Boil water and pour into the cornmeal and mix well
Put in the baking powder
Knead into a dough
Sealed and relaxed for 20 minutes
Rolled into long strips
Sliced into even-sized dosage of 8 dosages
Rolled dosage into a conical shape
Poked holes in the dough from the Poke holes at the bottom
Rotate the dough while poking holes
Make sure the edges are even
The outside is conical
Transfer to a steamer drawer
Steam the dough on a pan with cool water

Tips
Steam the dough after blanching and then steam the dough for 20 minutes
Steaming the dough is not easy. The steamed dumplings are a bit sweet after blanching.
You can also leave out the baking powder, but adding baking powder tastes looser.
Boiled water between 140 to 150 to adjust.
Cooling the water for steaming will give the dough a cushion for a second rise.
(2) How to Make Cornmeal Wo Wo Wo Bao (玉米面窝窝头)
食材用料:White Flour 150g, Cornmeal 150g, Yeast 3g, Pure Water 150-160g.
Steps:
Prepare ingredients: white flour, cornmeal, yeast.
Cornmeal and white flour 1:1, 150g each.
Melt the yeast powder with 150g of purified water. (The amount of water absorbed by the flour varies, so you will need about 150 to 160 grams)
Pour it into the mixed flour and mix it into a floury consistency.
Knead into a dough.
Cover with plastic wrap and relax for 20 minutes.
This is what it looks like after 20 minutes of relaxation.
Roll into long strips.
Divide into 12 equal portions.
Knead them all gently with the palms of both hands.
Take out 4 of them and divide them into two.
Roll them into 8 large balls and 4 small balls.
Flatten the large balls gently with the palm of your hand.
Brush with a little oil.
Place the small balls.
Slowly ball up like this with your hands.
All together.
Go back and ball up the front a bit more, keeping the size consistent.
Place in the steamer.
Relax for another 20 minutes, after which they will be noticeably larger.
Steam for 12 minutes over high heat, then simmer for 3 minutes before opening the pot.
