First of all, soaking and washing is both troublesome and very important.
First you have to soak it in boiling water to soften it, and then scrape the sand off of it with a knife; then trim off the hairy edges until it's cleaned of sand.
Boil the cleaned shark fins in cold water, add a little alkali, and cook them over low heat for about an hour, until they can be pinched with your hands, then rinse them once or twice, to remove the alkali flavor.
As for the way to eat shark's fin, the most basic are "shark's fin soup", "shark's fin rice" and many others.
These two I have done, practice instructions in the following:
Shark's fin rice ingredients are: half a two shark's fins, scallops a little, soy sauce, shrimp a little bit, green onions, ginger, peppercorns, star anise (daikon), chicken broth, salt, monosodium glutamate (MSG), cooking oil, starch.
Practice:
1, the first shark's fins soaked to more than 2 hours;
2, the soaked shark's fins with water to cast clean, in the pot of cold water with onion and ginger froth to cook for 3 minutes, and then with water to cast clean;
3, take a pot of cooking oil, in the peppercorns and seasonings to fry a little bit thrown away in the shrimp and scallop stir-fry a little bit, fell into the seafood soy sauce to finish the bursting pot!
4. down into the soup (I put in the refrigerator frozen stored in the bone broth), in the appropriate amount of water and shark fins boiled;
5. into the salt and chicken essence, in the addition of water starch hook Pu can be.
Shark's fin soup is roughly as follows:
Shrimp, shark's fin wash, bamboo shoots shelled and shredded, mushrooms soaked soft and shredded spare.
Dust the shrimp with cornstarch and scald in boiling water. Heat a frying pan and sauté the mushrooms, then add the enoki mushrooms and bamboo shoots, then add 2 cups of water and bring to a boil.
Add the shark's fins and bring to a boil, then add the shrimp, vinegar, sugar, and monosodium glutamate (MSG) to the pot, thicken the sauce with cornstarch, and sprinkle black pepper on top to finish.
There are other ways to eat it, so do a search on Baidu.
However, to protect wildlife, it is best to eat less or no shark fins!
